Hello Kirsten, In Pages, you set the type of bullets you want for your bulleted list in the Text inspector, List tab. Unfortunately, you won't be able to read the bullets with VoiceOver, however, you can check that they're there by using the very handy "New TextEdit window with selection" service item as they show up just fine in TextEdit.
