Hi Michael.  You can accomplish what you want with this simple AppleScript
Since I can't attach files to list messages, I'll paste the text of the script 
below.

tell application "Audio Hijack Pro"
        set theSession to the first session whose name contains "Skype"
        tell theSession to start hijacking
        tell theSession to start recording
end tell

What you want to do is open up script editor, and copy the above script in, and 
save the file. 
I'm assuming you're using Snow Leopard.  If so, you can attach the script to a 
keyboard commander key.  Then you can run it from anywhere.
