Geoff, I don't think there is a list like what you're looking for that has all the system-wide shortcuts in one place. If there is, I'd like to have it too. While it is true that you can go through menus in applications and find a lot of shortcuts that way, including the finder menus, lists can be useful tools for learning, so if there is such a list somewhere, I hope it will get posted here.
