Two answers about how accessible ...

1.) I had several failed attempts at installing a client Linux.
Debian did work. Once I got into the Debian installer, I came close to
getting a functioning installation, but not quite. Eventually I broke
down and granted remote access to a sighted colleague for help with the
installation. I do now have a function Debian that I can update in the
usual way Linux is updated.

2.) Operational everything is fine once I trick my Mac into giving
focus to the client OS. Currently, this seems to require temporarily
turning off Voice Over. The Mac seems to want to stay focussed on VMware
chrome even when the VM is full screen. However, once I get focus set in
the guest/client OS, it just works and continues even after I alt-TAB to
other apps.
