Instead, you should define a macro in the preamble and use that. Maybe you want all page references italic that refer to a definition of the indexed term, so that users can easily find definitions. If so, put the following in the preamble \newcommand{\IndexDef}[1]{\textit{#1}} and write my entry|IndexDef in the index entry.
