The document text is shown using a unicode font, so you don't need to mess with font encodings: if you have iso10646-1 fonts, LyX will be able to show any language that you can input. The text in menus/dialogs is shown using an 8-bit encoding. You can control which encoding is used by setting the LANG environment variable (in the future, it will also be unicode).
