You mean output to the latex file, right?
No work has been done to ensure that latex is able to read/typeset the
output from the unicode branch yet.

I know that there is a utf8.sty for latex, so my (simple) plan was to
just change the latex output to be plain utf8 as a first solution.

Can you tell me more about aleph?
