I hope that this works now. Could you please test the new installer:

and tell me what path to the latex.exe is now shown in the installer?
(You must uninstall LyX 2.1RC1 first. This is the same as with the beta releases - don't have the
time to fully support also the test builds that the can be installed over each other and for the
betas this is maybe technically not always possible because of bugs.)
