I think that 'Default' in the context of the LyX editor pane means that LyX would honour any settings that you have set in Document Settings. When one switches the main language of a document (to French), then all the text that has already been written in 'main language' (say, English) should be switched automatically to the new default, French. All text in other languages but French, should be kept underlined and marked as 'secondary language'.
