We do not guess it. I introduced a converter flag that defines the (latex)
flavor, and we check for that.

Of course, we could additionally add such a flag to the output formats. That
would probably make the check faster, but I do not know it's worth it (now).
Probably not, right now. Perhaps this could be rolled into the deferred
converter stuff....
