I think what you want is described in http://lilypond.org/doc/v2.12/Documentation/user/lilypond/Creating-MIDI-files#index-instrument-names-1 As MIDI doesn't include a djembe instrument per se, I suppose you'll have to choose something like "taiko drum" or "synth drum" to get a sound close enough to the djembe.
