I think this should rather be

{ <\tweak duration-log #2 g \tweak duration-log #2 e' e''>2^. }

Alternatively one can simply do

\new Voice << g4 e' e''2^. >>

(the \new Voice is necessary as there has been no music before this, so there 
does not exist a voice, and Lilypond will then create one Voice for each 
parallel music).
