I found myself wondering the same thing. As I copied over {,u}mount I thought to myself, "do I actually really need these?". Even as a user of multiple partitions I mount them before I chroot in to the environment, that way I have everything ready for creating the directories. I have to create the mountpoints first though (var, tmp, usr, home), but this isn't a big issue. As for more I don't really consider it a necessity. If you need to view something there's no reason you can't just pull up another terminal and work from that; I constantly have to do this when I want to edit something in a Makefile.
