I own a plans built KR2S (N6399U) which I feel was exceptionally built, and
will be using as a baseline/reference for my own project.  Below is a
summary of what I am envisioning.  Please feel free to comment on this
setup and offer your opinions as well.

Tri-Gear (personal preference)
Dual control sticks
AS5048/45 airfoil (stronger spars, more wing tank volume)
Cockpit Width - Stretched 40" (assuming no serious structural/aerodynamic
ramifications)
Speed Brake (belly board)
NACA 63009 - elevator (less drag)
NV/Aero Wheel Pants/Fairings
West Virgina University Blue & Gold paint (*see question below*)

Dual wing tanks and a small header tank (~16 gallons)
Revmaster 2300, upgraded 2100D (~80HP), or Corvair 2700
Ed Sterba Propeller

Steam gauges (personal preference......yes I know haha)
Ipad mounted with WingX or Foreflight
Engine Monitor (EGT/CHT)
Handheld Radio (removable in order to use in a different aircraft if needed)
Transponder/ADSB-Out

Empty Weight: 650-700 lbs
Gross Weight: 1150-1200 lbs (500 lb useful load)
Estimated Cruise: 120-130 KTAS
Would like ~700-800 FPM near gross
Range with 45 min reserve: ~300 NM (all the more I would need before a
break)

I would like to achieve at least a 700 FPM climb at gross, and cruise
around 120-130 KTAS.  I believe it is possible with this setup, as N6399U
climbs out around 400-500 FPM near gross (but it's only ~70 HP), and
cruises at ~110 KTAS with a Sterba 54x54" propeller and the RAF48 airfoil.
The "new" airfoil should add another ~5 KTAS and a slightly better
climbout, and a higher pitched 54" x 58" propeller should add another ~5
KTAS in cruise as well.  With newer wheel pants and some small aerodynamic
"clean ups", 120-130 KTAS seems quite doable.

I would love to paint it WVU Blue and Gold, but I do recall reading several
posts about the foam/glass not enjoying darker paint on a very hot day,
possibly warping/loosening the airframe/epoxies.  Can anybody shed some
light on this?

To start off with, and have a little bit of fun as well, I have began
modeling my (envisioned) cockpit panel in FreeCAD, and plan to build the
entire plane on here before beginning construction.  I may even take it a
step further and try to analyze my design in a CAE software to try to get a
grasp at it's performance.

If you made it this far, thank you very much for reading this far.  With
that said, I humbly ask......what am I missing, and what shall I keep an
eye out for?
