Where are you from, some places are harder to get timber than others.
Here in Australia , many timber builders use Hoop Pine, a little heaver but 
stronger I'm told.
Aircraft ply is the preferred choice for ply, due to its mage and strength, 
but expensive of course.

Spruce- I am no expert, but can I say the Tony Bingelis  Books set is a must

Is 6oz fiberglass the proper replacement?-- 6oz  would do if 5 oz not 
available. I got my F/Gass supplies from a Canoe manufacture, so look around 
and
see what is in you area, talk to them for help.

You can but Epoxy in large 20 lit, so again look around to see what you can 
find. I use west system, but other companies make equilivant products. it 
pays to ask.
