One layer from the forward spar aft to the trail edge of the wing is 
quite sufficient.  My wing is built to plans and has held up very 
well for 385+ hours now.  It has not been bent, folded, stapled, 
mutilated, de-laminated, or otherwise damaged in the seven years 
since first flight.  The only thing that might damage a single layer 
is stepping on it.  If you plan to step on the wing to enter / exit, 
you will need to internally brace the wing in that area and add an 
additional layer of glass, only in that area.
