You can have problems with your voltage going way high if you don't have a battery. I would suggest that if you want to remove the starter and big battery that you install one of the small sealed lead acid batteries like a Powersonic that weighs three or four pounds.
What are you keeping the alternator for? If you are just powering a few instruments you can take off the alternator and use just the small battery. I know of one person running just a small battery for the electronic ignition for take off and landing with no alternator.
