It is a bad idea to do it with a composite sheet without a whole lot of testing. What is the flexure lifetime. The resin would probably fail before the fibers but how long? I don't know and I don't have the data. In addition, laminated construction is very weak in peal strength. It would be difficult to design an all-laminate flexible hinge that does not depend on resistance to peal unless you use mechanical fastenings. You could do it with an aluminum plate, but again, it would have to have mechanical fastenings and require additional testing. Why would you want to change?
