I showed how to do this at http://home.hiwaay.net/~langford/owings.html .
Level the fuselage and use the chord line of the airfoil template drawings
to set the angle.  If there are no templates or a chord line drawn on the
outer ribs, draw a line from the farthest forward part of the nose through
the trailing edge and you'll be very close.  And like Dan said, make sure
they are correct with respect to the stub wings also.
