Rick, I would cut the forward in half, attach a piece of 1/4" Lastofoam to the underside, slice a piece of regular foam that can be easily sanded, to the shape of the gap. Fill that area with that foam and sand smooth. Put bid on the under and top side.
On the Turtle deck, you probably have more issues than just the fact that your plane has been widened. You will want to first consider what you want the shape behind your head, to be like. Make a bow into that shape. Some people make the bows from strips of wood. I have found that the easiest to make is using foam and glass. Once you have the bow in place, cut the lip off the front of the turtle deck, and spread it over the foam. You can attach it with flox and clamps. Now you will fill the sides with sheets of foam, sort of like filling the gap on the forward deck. This gives you a nice smooth finish on the top.
