Answering my own question, I think the "official" image, besides enjoying 
higher level of trust, also have the benefit of auto refreshing. Our 8.11 image 
was [refreshed 6 days

 probably since [openjdk image was refreshed 7 days 
ago|https://hub.docker.com/layers/openjdk/library/openjdk/11-slim/images/sha256-f77d3c3743d311b9724fe31f8fd24b379fee949fd14239317576aa0677675561?context=explore]?
 And that was probably due to an update in 
[debian:bullseye-slim|https://hub.docker.com/layers/debian/library/debian/bullseye-slim/images/sha256-8dd559eed3086238a27a6cad15ec5c4b11c0868840d363a0a12cb72405ed3c21?context=explore]
 8 days ago. The azul/zulu image you propose was refreshed 13 days ago so they 
are probably actively maintained too...

But if we were to publish to "apache/solr" namespace only, we'd probably need 
to setup a Jenkins job to refresh (build + push if base image changed) images 
nightly, so we propagate fixes in our base image in-between Solr releases.
