nano + vim is the way to go. Removing VIM would be a very bad idea, as a lot of people (myself included) cannot live without it, and it (or vi) are almost always expected to be available. Nano is a good, easy to use, editor for those new to unix. If emacs was possible, I'd say include it too. Maybe a stripped down version? (Not an emacs user, don't know much about it, sorry...)
