Grub sets all sorts of boot-time parameters for the kernel, including
the video mode for the first screen when the kernel takes control.
There are often a couple lines of parameters for each kernel choice.
See /boot/grub/menu.lst
to see how yours is set up.  They have changed the way grub
works, so I don't really understand all that is going on it there
now.
