Hi Matthias, all I just installed Ubuntu 21.04 from scratch (formatted the Pop!_OS SSD) and the default theme (Standard) does not cause AOO to switch to the High Contrast icon style.
However the problem does occur if the user manually switches to the Dark Appearance. Turning off the Accessibility switch partially solves most of the problem, but there are other small glitches https://imgur.com/a/NFqJqoZ Answering your previous question: no I had not restarted. In the second image from today's Imgur you can see what it looks like with the Automatic Galaxy icons after restart.
