At least some NVME drives report that shipped with, 512 bytes blocks, they would have better performance switched to 4k ones. I would not clone partitions to a drive with different block size, it is better to copy files there.
I would avoid plugging disks having same partition of filesystem UUIDs or labels. In my opinion, it is better to regenerate UUIDs, to update labels and to adjust fstab, crypttab, grub configs with recreating initramfs afterwards.
