You need the KF6-based konsole from experimental (version 24.08),

Latte-dock hasn't got a new release in a while, and definitely
unfortunately
not for Plasma 6. It may be the case you may need to drop it.

So KDE6 IMHO is not up for the job (yet) of replacing Latte-dock, after
spending far too long trying various roundabout ways to use panels and
plugins I didn't even get close, or got a stable result...
But Latte-dock is being ported to plasma 6:
