It would be correct if you had two directories: ./meetings/logs/

But when combined into a word or phrase (which you effectively do when you 
hyphenate), "meeting logs" is much more natural and correct.
To have both as plural, you need to reorder it: "logs for the meetings".

It's not an uncommon error, but google makes the preference quite clear:
"meeting logs": 11.000 hits
"meetings logs": 1.470 hits (and a lot of those are for things like 
[...]/meetings/logs/[...] or "meetings[.,;] logs")
