No experience with EXP brand but I did what you are planning two years ago with 
West.  On top used 3 coats 105/207 followed by three coats epifanes matt finish 
varnish.  Results were outstanding

I had planned to take up the sole and lightly sand and then re-epoxy the edges 
using a thickened epoxy.  Then I lifted the section covering the bilge which 
woul have the most wear on the edges and they are in great shape so I abandoned 
the idea of redoing the edges this year

Thanks for the input folks. I should have been clearer in my original email. I 
am looking for input from people who have experience with "exp system" brand 
epoxy (https://www.expsystem.ca). It is manufactured in Peterborough Ontario 
and is widely available in local chandlers. It is almost half the cost of the 
comparable West System products. I have a lot of experience with West System 
and think they make great products, but they are a little pricey. One of the 
reasons I am replacing the existing cabin sole is that there are places where 
water has penetrated the finish and compromised the ply. It might have been 
caused by poor application of the varnish or failure to maintain the finish by 
the previous owner, however I would feel better applying a 2 or 3 coats of 
epoxy before I move on to varnish.

Hello,
Not sure I would use epoxy at all except to seal the ends and cuts on the ply 
veneer.  A good quality varnish on the surface is much easier to redo or touch 
up and i would paint the undersides with rustoleum or equivalent.
