The idea of penetrating epoxy on the edges is good.

Regular epoxy has little tensile strength.  If you put regular epoxy on the
edges of any laminated board, i.e. plywood, it may crack allowing moisture
to enter the plies.  IMHO, adding microfibers doesn't add much tensile
strength either.  You could try vinylester "kitty hair" put you will have
to sand the top corner very carefully to minimize exposing the edges.

Many years ago, I replaced a plywood transom in one of my personal boats.
I dutifully coated the exposed edges with epoxy.  A couple years later, the
epoxy cracked parallel with the plies.

I would choose either penetrating epoxy or would actually cover the edges
with glass and epoxy.
