If you need a windlass, and the size, really depends on how you plan to use the boat.
I put a Maxwell 1200 on Stella Blue. That's double oversized. An 800 is the recommended size for my boat. However, as a single hander I have to break a lot of rules. Like, hauling the boat up to the hook with the windlass. There are tricks, of course. Short bursts which keep the motor from getting hot, and let the catenary on the rode pull the boat up until the chain is vertical before the next burst. And in heavy chop, pull the chain in when the bow is on the down bounce and stop before the bow bounces up, letting the chop pull the boat forward.
And this boat was never designed to carry a 55 pound anchor and 300 feet of chain. I removed the V-Berth water tank to balance the weight and keep her on her lines. Again, it depends on how you'll use the boat. I've been alone on a lee shore with 40 knots funneled into what was a protected anchorage but turned into a perfect wave tunnel, and have never regretted oversizing the ground tackle.
