I rarely lock my boat, but if I'm away for an extended time, I will. The lazarette is always unlocked and the anchor is always in the roller (or on the bottom of the ocean).
Also, if I'm in dodgier places, I'd lock it. Annapolis during October (see Joe's comment) or certain poorer Caribbean anchorages where the locals might be tempted . I wouldn't include St. Martin in that list as I would view SXM as totally safe. Places like Wallilabou in St. Vincent, or Castries or Soufriere in St. Lucia come to mind in this regard.
