I completed this on Apple Tree about five years ago ... memory is a bit foggy 
but I think you can do it with two sheets. You need to "spline" the section by 
the galley to get the correct width as it is over 4 feet wide there. I first 
did a rough cut (within say a half inch) with a jig saw, then used a router 
with the original boards as the guide and got a real close fit. I also go rid 
of some goofy small bits of floor boards. The main salon area is now two large 
pieces with two "hatches" to get into the bilge. One piece for the gallery 
area, one piece for the small area by the head, and finally a small one in the 
v-berth. I also went with cup washers around the perimter.
