Enable SSH on ESXi, use a cron job on your backup machine to pause and copy (rsync or whatever limited tools ESXi supports) the VM to your backup server. When I had ESXi running at home I would pause, rsync the VM to a location on my Linux box, then use rdiff-backup to take snapshots of that backup (which I had configured to overwrite daily). You could use sshfs to simplify this process and do all of the processing from the Linux backup machine.
Is the ability to backup live VMs still missing from ESXi (I last used ESXi 4.x)?
