The most straightforward method would be to buy faster hardware. A more complex approach would be to have a better understanding of your email traffic and only send stuff to ClamAV after you've done your best to refuse spammy/viral messages using less costly mechanisms such as greylisting, RBLs, or things like Amavisd-new & similar (bogofilter, policy-weightd, etc) before feeding the email to more expensive filters such as virus scanning or SpamAssassin.
