Black Forest Cheesecake

1 1/2 cups chocolate wafer crumbs
1/4 cup butter, melted
2 tbsp granulated sugar
1 tsp ground cinnamon

Filling

3pkg cream cheese, softened
1 1/2 cup granulated sugar
4 large eggs, at room temperature
1/3 cup kirsch

Topping

6 oz bittersweet chocolate,coarsely chopped
1/2 cup sour cream
1/2 cup canned cherries, drained (optional)


    Preheat the oven to 350F. Butter a 10-inch springform pan. Mix 
the crumbs, butter, sugar, and cinnamon in a bowl. Press in to the 
bottom and partway up the sides of the prepared pan. Filling : beat 
the cream cheese and sugar in a bowl with an electric mixer at 
medium speed until creamy. Add the eggs, one at a time, until just 
blended after each addition. Add the kirsch. Spoon the filling in to 
the crust. Bake for 50-60 min or until set. Cool the cake in the 
pan. Topping : melt the chocolate in the double boiler over barely 
simmering water. set aside to cool. Add the sour cream. Loosen and 
remove the pan sides. Spread with the topping.Arrange the cherries 
on top. Refridgerate for 6hrs.
