There have been a few reports of problems on 2007 but I've been unable to replicate them. The reports are somewhat different to yours though. Here's some questions...
Can you tell me how big your mailbox store is? Are there any messages in the windows event log that might be relevant? Are you definitely running the 64 bit version of bacula?
