I think if you download an old controller version from before the EOL, you can probably manage it. Go to:
https://www.ui.com/download/unifi/ Scroll down past the "Firmware" section to the "Software" section. Below that, click the button that says "See Past Software". Controller versions there go back to 2019. I've not done this before, but it seems like it should work. Just keep in mind that since it's not the same controller that was used to adopt and set up the AP, you'll probably have to physically reset the AP before the controller will allow you to adopt and do anything with it. And of course, if you reset the AP, and then find out that the old controller version somehow knows it's EOL, then you're completely hosed and have effectively just bricked the AP.
