I did exactly this to migrate to the new root disks (the RAID0 volume was a hundred or so cylinders smaller after being moved from the LSI1068 to the PERC 6/i [AKA LSI1078]). It worked perfectly. The only thing I did differently is that I performed the snapshots before powering down to boot off of the CD. Only one problem that I found that I'd like to see added to those instructions.
