The whole point of ZFS is that you don't need to worry about this type of thing. As you have already noticed if you really want to you can use reservations to do this but it is often better to not set reservations or quotas unless it is really needed. The great thing about ZFS is you have the flexibility to choose, and you can easily change your mind later without having to deal with a volume manager and a file system.
