See attached screenshot.

1) Open or create a document of any type.

2) Click the down triangle icon found in the status bar, next to the check 
spelling toggle.

This displays the check spelling dialog box.

3) Select "English (GB)" from the "Default language" combobox.

4) Close the dialog box.

This setting is done once for all and will apply to all documents and all 
elements having no xml:lang (or lang) attribute specified or inherited.
