never documented and was never part of the product (not even the
Developer License that your company has purchased).

No, not at all. This should work smoothly. I don't think that this will
even break the digital signature used to sign XMLEditor.app/.
I know about add ons installation and the like, but I'm missing the
makapp.sh script to (re-)package XXE with a set of customizations to be
run on a Mac.
OK.
If there's no way to have that script back, then I think I'll just have
to create a zip out of the customized XXE folder, and install 'by hand'
on the target Mac.

I'll send you privately the latest mkapp.sh along with its companion
files (Info.plist, xxe.icns, xxe-mac.sh) in case you can do anything
useful with these internal tools.
Note that I won't send you jre1.8.0_31.tgz which contains the private
Java runtime (topmost folder being jre/).
