I've figured out how "solve" the problem: on [[sensor_map]] the variable is not "uv" but "UV" (it's case sensitive)
UV = uv_index.95.FOWH3080Packet and about rain, weewx doesn't archive the rain already present on weather station but use it to calculating the newest rain.
