Use VNC as an inetd service.  When you connect, each person will get
their own login screen and then they can log into their own account just
as if they were sitting at the physical terminal.

I have config files and crude instructinos to help you if you want. 
E-mail me and I will forward them to you when I get back to work on
Monday.

The only drawback is if the student closes the session (client window)
anything they may have been working on is gone if it wasn't saved.  The
benefit is that you don't need to configure Xvnc specifically for each
student.

creates a new server?  Example: a person connects to

desktop and logs that person into it?

Right now, I've basically written a script that says

50 or so times.  Aside from being awkward and taking a
long time, it's also inconvenient for the students. 
One logs in as n.n.n.n:1, the next as n.n.n.n:2, and
so on.  It would be way easier if students could just
type in n.n.n.n and then the vnc server automatically
generates a new desktop and logs them in.

The idea is that the vnc server runs on a heavily
restricted general account.  The individual students
then log into their own accounts and do whatever.
