Then start the VNC session using -depth 16.  How simple can it get?  Or
have you already tried this?  Also remember VNC cannot use hardware
graphics acceleration, which you might be used to on conventional
workstations, and doesn't support OpenGL (yet).  You might find, in this
case, that running conventional X sessions with x0rfbserver is your best
bet, although presumably more expensive in hardware terms.
