I find that the easiest and quickest way to find the Airplay button in the Control Centre is to touch the bottom left of the phone. If you are on the Flashlight button you just have to swipe left once from it. If this doesn't put you on the Airplay button then as Ben said it is likely your Airplay device is not recognized. Rebooting the phone as well as your Airplay device might help. Just out of curiocity, which Airplay device is it?
