I am not quite clear whether the headset is still showing in your list of
devices or not. If it is and it won't connect, it is better if you remove
the device completely and then pair it again. You do this by going into
Settings and Bluetooth, then if you see "Plantronics Backbeat there will be
a "More information, Plantronics Backbeat button" or something like that.
Double tap on it and look for a "Forget" button. It's similar to how this is
done in WiFi where you have a button besides each network and you can forget
the network. Once you have done this, push and hold the power button until
you hear the beeps which according to Lois this headset should make. Anyhow,
if it doesn't beep, just hold it for a good 5 or 6 seconds, then let go and
see if the headset shows up in your list of devices again.

Hi Alex,

 

A quick Google search for "Plantronics Backbeat User Guide" produced the
user guide in PDF format. After I opened it I did a Jaws virtual find (Jaws
Key+Control+F) and searched for "pairing". The first few results were from
the table of contents, pressing F3 a few times easily found the following:

 

1. Turn on your phone's or device's BluetoothR feature.

2. With the headphones powered off, press and hold the Power/Pairing button
until the LED indicator flashes blue and red.

3. Use the phone or device menu to search for the Bluetooth headphones and
select BackBeat.

See your phone's or device's user guide for more information.

4. If prompted, enter 0000 for the PIN code/passkey.

Some phones also require that you accept the connection.

Pairing is successful when the LED indicator flashes blue.

 

Quite a few headsets use this method, i.e. you turn the device on and simply
hold the power button for a few more seconds to put the device in pairing
mode. Obviously many of us can't see if the LED flashes blue and red or when
it flashes blue after successful pairing, but checking your iPhone's list of
Bluetooth devices usually works, if the headset goes into pairing mode it
will show up in the list and of course Voiceover will switch to the headset
once it's paired and connected.

 

I also attached the PDF copy of the user guide, maybe save it in a place
where you can find it again for next time.
