It's my understanding that if you came from GSM, you don't need LTE to do both 
voice and data simultaneously. This was a CDMA restriction which you don't have 
as you move to LTE.

Richard, you can still turn off LTE and limit the data connection to 3G by 
going into Settings > Cellular > cellular Data Options
The first item in Cellular is a simple on/off switch which allows you turn 
cellular data off altogether.
The second item most likely sounds like this "Cellular Data Options, Roaming 
Off, button"
Whenever Voiceover says "Button" at the end it indicates that this is not a 
simple on/off switch but that more options are contained in the item.
Here if you double tap you get the following:

Data Roaming, off - double tap this to turn data roaming on
Voice and Data, LTE button - this is another submenu so to speak, double tap it 
and you have the option to double tap on "3G" this would select it and if you 
then go back you would  hear "Voice and Data, 3G button"
The next and last item in the main Cellular Data Options list is Low Data Mode 
which again is a simple on/off toggle and if you swipe right from it you hear 
the explanation about how it helps to conserve data usage, but if you do turn 
it on things like automatic updates and certain background tasks like photo 
syncing are paused and will only resume when the phone connects to WiFi.
Ii have low data mode turned off because I am on WiFi a lot anyways and if I am 
not I do have 9 Gb of data eachmonth which is plenty not to have to worry about 
this and I'd rather my photos upload to iCloud, for example what if I took some 
pictures and then the phone was destroyed or stolen shortly after, my pictures 
in this case would still be on iCloud or what if my phone was stolen and as it 
has happened before the thief was a bit uneducated when it comes to technology 
and happily took some selfies which then would upload to iCloud and would be 
accessible for me to share with the police.

ON my iPhone, there is no distinction between Cellular Data and LTE.
If you plan to have internet connectivity when not on Wi-Fi, you have to have 
cellular data turned on.  Your phone will take whichever signal is stronger.
Some phone services allow wi-fi calling too.

So, if you are at home with a solid Wi-Fi connection, your phone won't use 
cellular data when surfing the internet, getting email, streaming audio or 
video, etc.

If you are in your backyard, and your Wi-Fi signal gets weak, but you have 
cellular on with a good signal, it will switch to using cellular data.  Which 
of course, uses data, but not necessarily more battery.
The switching back and forth uses more battery.
So, if you know you have good Wi-Fi, by all means, turn off cellular data so 
the phone isn't seeking the best connection and that will save battery because 
it isn't looking for the strongest signal.

But, as soon as you get out of wi-fi range, your streaming/phone call/ etc., 
will stop.

I am more picky about this so I go into the Cellular settings and turn it off 
for all the apps I don't want eating my limited cellular data without my 
knowledge.

That way I don't have to remember to turn on cellular data when we go somewhere 
and want to use GPS, etc.
