Robert, Make sure your phone is plugged in, then open iTunes and find you rphone under devices. By default the "Summary" tab should be checked. Just keep pressing the tab key until you find "Open iTunes when phone is connected". It actually doesn't say it exactly in those words, I did have the exact wording in my previous message to Kevin, but it definitely starts with "Open iTunes..." It's a few tabs after where you find the stuff about restoring and backing up your phone. Once you find it, press spacebar to check the option, then tab to Apply and press the spacebar.
Personally I prefer to start iTunes manually because I don't necessarily want iTunes to open when I plug in my phone to charge and I definitely don't want iTunes to open on Windows startup because it's not that often I need iTunes. I have it on fourth place in my taskbar and in Windows 7 that means pressing Alt+4 on the number row will start it no matter what application I am in.
