uWSGI 0.9.7 can be compiled without python, you can embed ruby interpreters or lua, or all together. Regarding pypy it should be possibile to use it on top of the python plugin, i will post an example soon. Jython could be run on top of the uWSGI JVM plugin, but this plugin is still not so evoluted.
