I use vi(m) too (among other editors) both locally for quick edits and in the same environment you cite -- but I still have nice color syntax highlighting in both. Not sure why you wouldn't have that too. OTOH, if I'm doing more complex stuff I'll use jEdit's remote editing over SSH capability, which requires nothing unusual on the far end.
